Our recipe

For 1 kg :

Wheat flour : 525g
Water : 239g
Lupin protein concentrate FRALU-CON : 163g
Sunflower oil : 62g
Salt : 12g


Our process

Mix the flours and salt
Knead all the ingredients for 5 minutes at medium speed then 5 minutes at high speed
Rest 20 minutes at 20°C
Roll out the dough until it is 1-2 mm thick
Cook in a pan at 180°C for 10 seconds per side
