For 1 kg :

Rice flour : 310 g
Potato starch : 180 g
Sugar : 176 g
Unsalted butter : 176 g
Water : 96 g
Lupin flour FARILUP 400 LHE / TE or FRALU-T-NF : 52 g
Baking powder : 5.9 g
Xanthan gum : 2.3 g
Salt : 1.8 g

Our process

Mix the softened butter and the sugar
Add the dry ingredients and mix
Add the water and mix
Leave the dough to rest for 1 hour at 4°C
Roll out the dough and cut out biscuits
Leave the biscuits to rest for 1 hour at 4°C
Bake for 15 minutes at 170°C
