Genoise Mix – 60%

Whole eggs – 30%

Cold water – 10%


Our process

Mix together the Genoise Mix, whole eggs & cold water with an electric whisk at a high speed for 15 minutes
Pour in a baking tin in the desired shape or on a plate
Bake for about 25 minutes at 160°C, depending on the thickness of your genoise
