Our recipe

Wheat flour (for bread making) – 74.6%

Olive oil – 4.1%

Lupin flakes or chips – 4.1%

Standard or toasted lupin flour – 2.4%

Black olives – 12.2%

Salt – 1.5%

Yeast – 1.2%

+ Water – 30.2%


Our process

Put all the dry ingredients in the dough trough, except the salt & yeast
Mix for 2 minutes
Add the salt, oil, yeast, water & black olives
Knead for 15 minutes
Make 80g loaves
Let rise for 3 hours in an oven
Baking: 15 to 20 minutes at 250°C
