Our recipe

For 1 kg :

Water : 400g
Sugar : 260g
Chopped roasted hazelnuts : 140g
Lupin protein concentrate FRALU-CON : 87g
Chestnut flour : 73g
Unsweetened cacao : 40g


Our process

Blend the hazelnuts until a fine paste is obtained
Mix the water, flour and FRALU-CON for 5 minutes at medium speed at 80°C
Add sugar, cocoa and hazelnuts and mix for 10 minutes at medium speed at 80°C
