Our recipe

TT-B fava bean flour – 19.5%

T65 wheat flour – 19.5%

Eggs – 18%

Sugar – 16%

Dried apricots – 5%

Raisins – 5%

Almonds – 5%

Toasted chopped pistachios – 5%

Toasted chopped hazelnuts – 5%

Baking powder – 2%


Our process

Knead the dry ingredients and beaten eggs for 4 minutes on low speed
Form a 'sausage' with a diameter of 5cm
Leave to stand for 30 minutes at 4°C
Bake 20 minutes at 180°C - Medium ventilation
Remove from the oven and leave to rest for 5 minutes before slicing to a thickness of 1 to 2cm
Bake 12 minutes at 180°C - Medium ventilation
Let cool to room temperature
